The coffee bean, the roasting, the grind, the extraction…so often people focus on the coffee and production, but forget that 98% of coffee is water. Bad quality water will always compromise coffee quality.
Chemical and mineral composition of water can vary greatly based on your location. Different municipals treat water differently, and this can vary from day to day. Notice that some days your water smells more of chlorine than others? Or may have a different colour? Tap water contains varying chemicals and minerals in different concentrations which can have huge implications on coffee flavour, also.
Water hardness and the level of minerals in your water affect extraction of your coffee, which affects oil levels and mouthfeel. By controlling the levels of Total and Carbonate Hardness, you are able to affect properties such as how creamy or sweet the coffee tastes. It also affects clarity of coffee.

In most cases, mains water supply will not have the optimal characteristics for brewing coffee.

Reverse osmosis water is the best water for controlling contaminants, chemicals and mineral content for great tasting coffee.
